How to make Mozzarella Stuffed Chicken

This mozzarella stuffed chicken is juicy, flavorful and incredibly satisfying. With a golden seared outside and a soft melted mozzarella center, it feels simple enough for an easy dinner but impressive enough to feel special on the plate. Served with roasted potatoes, it is the kind of comforting homemade meal that is both hearty and elegant.

  1. 1Preheat the oven to 200°C / 400°F.
  2. 2Cut a pocket into each chicken breast without slicing all the way through.
  3. 3Stuff each chicken breast with mozzarella and secure if needed.
  4. 4Season the chicken with salt, black pepper, garlic powder and Italian herbs.
  5. 5Cut the baby potatoes into wedges and toss them with olive oil, salt and herbs.
  6. 6Spread the potatoes on a baking tray.
  7. 7Sear the chicken in a hot pan with a little olive oil until golden on both sides.
  8. 8Transfer the chicken to the baking tray or an oven-safe dish.
  9. 9Roast the chicken and potatoes for about 20 to 25 minutes, until the chicken is cooked through and the potatoes are golden.
  10. 10Sprinkle a little parmesan over the potatoes if desired.
  11. 11Let the chicken rest for a few minutes before slicing.
  12. 12Serve warm with the roasted potatoes.

Tips for the best result

  • Use a sharp knife to create a clean pocket in the chicken
  • Do not overcook the chicken or it can become dry
  • Let the chicken rest before slicing to keep it juicy
  • Roast the potatoes until deeply golden for the best texture
