How to make Healthy Mango Cheesecake

This healthy mango cheesecake is creamy, refreshing and made with lighter ingredients for a dessert that feels indulgent without being too heavy. It combines a simple oat-based crust with a smooth filling made with Greek yogurt, light cream cheese and mango puree. Perfect when you want a homemade dessert that tastes rich but feels fresher and lighter.

  1. 1Preheat the oven to 160°C / 320°F and line or lightly grease a springform pan.
  2. 2Blend or crush the oats until they resemble fine crumbs.
  3. 3Mix the oats with the honey and melted coconut oil until the crust mixture comes together.
  4. 4Press the mixture firmly into the bottom of the pan and chill while preparing the filling.
  5. 5In a large bowl, beat the light cream cheese until smooth.
  6. 6Add the Greek yogurt, mango puree and vanilla extract, then mix until creamy and fully combined.
  7. 7Add the eggs one at a time, mixing gently after each addition.
  8. 8Stir in the cornstarch until the batter is smooth and silky.
  9. 9Pour the filling over the chilled crust and smooth the top.
  10. 10Bake for about 40 minutes, until the edges are set and the center still has a slight wobble.
  11. 11Turn off the oven, leave the door slightly open, and let the cheesecake cool gradually for about 20 to 30 minutes.
  12. 12Remove from the oven and let it cool completely at room temperature.
  13. 13Chill in the refrigerator for at least 4 hours, or overnight, until fully set.
  14. 14Top with fresh mango pieces before serving.
  15. 15Slice and serve chilled.
