How to make Lemon Blueberry Tart

This lemon blueberry tart is fresh, vibrant and beautifully balanced between sweet and tangy. With a crisp tart base, a smooth lemon filling and juicy blueberries on top, it makes the perfect dessert for spring, summer or any time you want something light and elegant. It looks beautiful, tastes refreshing and feels special without being too complicated to make.

  1. 1Preheat the oven to 180°C / 350°F and lightly grease a tart pan.
  2. 2In a bowl, combine the flour, melted butter, egg and honey until a dough forms.
  3. 3Press the dough evenly into the tart pan, covering the base and sides.
  4. 4Bake the crust for about 12 to 15 minutes, until lightly golden.
  5. 5While the crust bakes, prepare the filling by whisking together the Greek yogurt, lemon juice, lemon zest, maple syrup and cornstarch.
  6. 6Pour the lemon filling into the baked crust and smooth the top.
  7. 7Return the tart to the oven and bake for another 15 minutes, until the filling is just set.
  8. 8Remove from the oven and let it cool completely.
  9. 9Chill if needed for a firmer texture.
  10. 10Top with fresh blueberries before serving.
  11. 11Slice and serve chilled or at room temperature.

Tips for the best result

  • Use fresh lemon zest for a stronger citrus flavor
  • Let the tart cool fully before adding the blueberries
  • Do not overbake the filling or it can lose its smooth texture
  • Chill before slicing for cleaner slices

Nutrition note

This lemon blueberry tart feels fresh and lighter than many traditional desserts thanks to its bright fruit flavor and creamy yogurt-based filling.

Storage and make-ahead tips

  • Store covered in the fridge for up to 3 days
  • Add the blueberries just before serving for the best texture
  • You can make the tart base and filling one day ahead
  • Serve chilled for a fresher finish
